Quite possibly the best movie I've seen in awhile. You must go see it!

I saw Brave on Sunday afternoon, and I'm going to see it again tonight! Since Sunday I've been house/puppy sitting for Mary while she is gone to Florida for the next few weekends. And I am ALWAYS working out! Hopefully I'll start dropping pounds soon :)

Chicken Pasta Salad

Adapted from Six Sisters' Stuff
I tried this recipe a little over a week ago, and I really enjoyed it (but of course each chef has their own preferences and tastes so I tweaked it a little bit) and so did Andrew and his roommate Alan. The boys managed to eat through about half of it, then the rest I enjoyed as leftovers for a few days longer, and it tasted better each day!

1 lb. cooked, shredded chicken (I bought a rotisserie chicken from HEB and used the whole 2 lb. chicken)
1 lb. cooked rotini or bow tie noodles
2 heads broccoli, finely chopped
1/2 red pepper, chopped
1/2 green pepper, chopped
1/3 onion, chopped
1 can diced olives
1 clove garlic, diced

2 envelopes dry Italian dressing mix
6 Tbs. apple cider vinegar
4-1/2 Tbs. water
1/2 cup oil

To save myself some time, I chopped up the vegetables, olives, and garlic, made the dressing in a ziploc bag,  and left it in the fridge overnight. This gave the veggies and dressing time to mix and absorb flavors. Combine the chicken with the veggies then pour the dressing over the veggies and chicken and mix together. Refrigerate before serving (I was able to skip this because my pasta, veggies, and dressing had been in the fridge overnight). You can also add a cup of shredded cheese and 1/2 cup of ranch dressing to the mix, but I really didn't care about adding this (although it holds everything together) because I wanted to cut out some of the fat.

Another Dead End

Yep, I got rejected from the last Occupational Therapy school I applied to. That brings my total to 7 rejections and no interviews. I have no idea what I'm going to do next, and I damn sure don't want to move back home. But I know there's something out there for me....

I've gotten into a really good workout routine at Aggieland Fitness, and I'm hoping I can keep up the routine for the next few months wherever I go. Mondays are my day with my personal trainer, Javi, and he is amazing! Tuesdays I take kickboxing, Wednesdays will be Cycling (but I haven't attended a class yet), Thursdays are for Zumba, and I usually try to take the weekends off. Sounds exhausting, right? It totally is. I've been super busy trying to fit everything into my schedule, and I STILL haven't finished my thank you notes from my graduation & birthday (its been a whole month since that busy weekend...crazy.) but I am working hard!

This weekend I'm going to San Antonio to visit my some of my cousins and just hang out together! It should be fabulous and perhaps just what I need.

A Little of Everything

Things in my life are kind of nuts right about now, but I promised myself that I need to blog at least once a week to keep all of you updated on my life :)

This past weekend was extremely uneventful--and so relaxing. I got a few thank you notes done, and did a little bit of cleaning. Saturday morning my friend Chelsea & I went to Aggieland Fitness for the free boot camp class at 10am and I am STILL SORE. I got to spend Saturday night and part of Sunday with Andrew, then Sunday night his mom and brother came into town since summer school at Blinn has started, and I love getting to see Andrew's family!

Monday was awful because my alarm clock decided that it didn't want to go off and I was late for work--what a way to start the week. On top of that, New Student Conferences started this week so I've been under a little more stress than usual. Monday night I had my first meeting with my new personal trainer, and I have gained way too much weight. So I can't wait to meet up with him again next week and shed these extra pounds! I made the worst decision for dinner, and ended up getting sick in the middle of the night. Tuesday was just as disastrous because my alarm ONCE AGAIN didn't go off, but I managed to set my phone as a back-up. Whew. Tuesday at work was rather blah, and Tuesday night Chelsea & I went back to Aggieland Fitness for the kickboxing class. Today I'm sore, but not as sore as I was when we finished boot camp on Saturday.

So far nothing exciting has happened today, and I'm taking a break from working out. Gotta rest my body! The recipe I said that I would post will have to wait a little bit longer, I forgot to take pictures and I can't seem to find the recipe while I'm at work. But come back tomorrow (or Friday) and maybe it will be up!
