First Snow of the Season

Yep. It's cold yet beautiful. I think we probably got 3 inches or so, and it warmed up quite a bit today so some of it has certainly melted. Although when I woke up this morning it was only 8 degrees out. Brr! I also counted shoveling snow as my exercise for today since we all know I haven't been to the Y in over a month.

Snack Mix Squares

Snack Mix Squares. A fun snack mix pressed into chewy bars, this treat is popular with kids of all ages.

Something cool my classmates started doing since we are on campus for lab all the time (twice a week currently) is Snack Club. The person in charge sends out a GoogleDoc for people to sign up each lab day to bring a snack. It started in the spring when we had back to back labs on back to back days, so we were essentially on campus 4-5 hours straight with no break. Enter Snack Club! Such a great idea. Here's the first snack I shared with my classmates. 

Makes: 36 servings
Prep/Total Time: 30 minutes

2 1/2 cups halved pretzel sticks
2 cups corn Chex
1 1/2 cups M&M’s
1/2 cup butter
1/3 cup creamy peanut butter
5 cups miniature marshmallows

In large bowl, combine pretzels, cereal, and M&M’s. In large saucepan over low heat, melt butter and peanut butter. Add marshmallows, cook and stir until marshmallows are melted and mixture is smooth. Pour over pretzel mixture; stir to coat. Press into a greased 13x9 pan. Cool until firm, cut into squares.

Helpful Hint:
Grease hands before pressing mixture into pan as mixture is very sticky!

Well well's been a hot minute since I've updated or even popped over to the blogosphere. I have to thank school for that. I successfully finished my first year of occupational therapy school a few months ago, and now I'm knee deep in year two. Only 19 more months to go!

I'm still trying to lose weight and since May I've dropped 15 pounds thanks to MyFitnessPal and my YMCA membership. But with 18 hours, 8 classes, and 3 labs, I barely have time for anything outside of school. Sometimes I wonder if this is all worth it. Deep down I know it is, but I think I'm just burnt out and ready to be done. The good news is that this time next Friday, I'll be on my way home for a week long clinical rotation at MD Anderson Cancer Center and a week off! I love schools in the north and their Fall Breaks; it is so wonderful and much needed.

Not much else to report...other than I let my hair grow out this past year and chopped a whole foot off right before school picked back up in August. Shockingly not my hair has already grown at least an inch since then, if not more.

Ah well, back to work.
